I first heard of what I ended up calling the “Cheddarpocalypse” — when Kraft gave a month notice to their cheese producers that their cheese would no longer be needed from Ig Vella, who I wish I could have interviewed for this book.  Much thanks to Sid Cook of Carr Valley Cheese for spending his time giving me the Wisconsin version of the same event.
