Roelli Cheese Haus Dunbarton Blue, a very special “cheddar”
Jeanne Carpenter, Chris Roelli, and me at my first real reading for Cheddar at Metcalfe’s Market in Madison.
Here’s a good history of the Triangle Shirtwaist Fire
I first heard of what I ended up calling the “Cheddarpocalypse” — when Kraft gave a month notice to their cheese producers that their cheese would no longer be needed from Ig Vella, who I wish I could have interviewed for this book. Much thanks to Sid Cook of Carr Valley Cheese for spending his time giving me the Wisconsin version of the same event.
Here’s Ig with Sheana Davis, on Ig Vella Day (which also happens to be my birthday).
