Searching for the first cheese factory in the United States led me to the Erie Canal Village where a period cheesemaking factory was moved from its original location. I hope the Village can hold on because this is one of the best cheese museums I have ever been to.

I also mention Comte in this chapter, one of my favorite cheeses with a history of over 1000 years. US claims of having the first cheese factory in the world disappear when one looks at the history of Comte in which cheese *must be* made by a village cheesemaker hired by the cooperative. Here are some soft, baby Comtes:
Pineapple cheese, a true American original. Factory production of this cheese pre-dates the Williams factory but it still relied on farm cheesemakers making curds which they them brought to the factory to make the final cheese. This was pre-HAACP.
